One of my absolute favorite treats when going out to a vegan restaurant is vegan french toast. Unfortunately, I do not go out to eat often, so I don't have it as much as I would like. The other evening, my parents decided that they would make french toast for themselves and my brother, so I decided to look online to see if I could find a vegan french toast recipe. I found this recipe from
PETA (I have adapted it slightly), and I couldn't be happier with how great it came out!
Vegan French Toast
Ingredients:
- 1 cup soy milk
- 2 tbsp whole-wheat flour
- 1 tbsp nutritional yeast flakes
- 1 tsp maple syrup
- 1 tsp vanilla
- 1/2 tsp salt
- pinch nutmeg
- pinch cinnamon
- 6 slices of your choice of bread
Directions:
- Mix all ingredients together (except for the bread) in a shallow bowl.
- Dip the bread in the mixture and cook on a griddle or pan (spray first) until golden brown on both sides (flipping in between).
- Enjoy with your favorite toppings!

I am a huge fan of both Earth Balance and nutritional yeast. I'll have to try this!
ReplyDeleteYum! That little pich of cinnamon is surely welcome ! (I LOVE cinnamon)
ReplyDeleteI would suggest a little bit more than a pinch, then...I'm not much of a fan of cinnamon.
