Tumblr Tuesday #64

It's pretty late on a Tuesday for me to be posting this (10:16pm over here), but I managed to get it together on time. Life has been pretty hectic for me, getting back into a routine after being sick, but I'm glad to be healthy again. I hope everyone is enjoying their week so far!

Vegan Caramel Apple Pie



After my boyfriend and I went apple picking a few weeks ago, we had a surplus of apples that we really had no idea what to do with...so we did what anyone in this situation would do and made pie. This caramel apple pie was so incredible that we had to make it twice!
This original recipe is via the Earth Balance-sponsored blog here. We kept the recipe the same, but made a few tweaks to the write-up to make it easier to understand. Let me know if you make this pie and what you think!




Ingredients:
  • two pie crusts, for bottom and top (I bought mine, but homemade would be that much better)
  • 3-4 apples, cored, peeled, and thinly sliced
  • 1/4 cup, plus 1/2 cup brown sugar
  • dash of cinnamon
  • 1/2 cup Earth Balance, or preferred butter substitute
  • 3 Tbs whole-wheat flour
  • 1/2 cup cane sugar
  • 1/3 cup water

  1. Preheat oven to 425F.
  2. Prepare apples. Mix with 1/4 cup brown sugar and a dash of cinnamon. Fill pie crust.
  3. Lattice (or if you lack that skill, as I do, crumble) the second pie crust over the apples.
  4. Combine the Earth Balance, flour, cane sugar, water, and 1/2 cup brown sugar in a saucepan, and bring to a boil.
  5. Reduce heat, and simmer for 5 minutes, until the liquid starts to thicken.
  6. Pour caramel sauce over the pie, letting it seep through into the apples under the top crust.
  7. Bake for 15 minutes at 425F.
  8. Decrease oven temperature to 350F, cover with aluminum foil, and bake for 40 minutes.

I have spent almost my entire weekend sick in my with my boyfriend (who I managed to get sick). I really enjoyed getting to spend so much time with him, but I am ready to feel better and get back into the swing of things. I am very much on the mend, and I hope everyone who is sick with an autumn cold/flu/who-knows-what feels better soon too!

Arrangements by Emily Blincoe

Although I may not appear so based on the current state of my apartment, I am a very organized person. Putting things in order is extremely pleasing to me. I love how everything looks in its place. 50 Books in 2014: 36-40

I have recently realized that I do most of my reading outside of my house, rather than when I am at home. I love reading on the bus, after I've put the girls to sleep, when the studio is quiet, etc. Perhaps this is because once I get home, I am exhausted and about ready for bed. I know that I should read before bed (rather than scroll through tumblr on my phone), but it's a habit I haven't managed to break. I'm sure I would get a much better night's sleep if I fell asleep to a book rather than my phone. I'll have to start to try doing this more and see if I notice any difference.
I have another update of books that I have read towards my 50 in 2014 goal. According to GoodReads, I am ahead of schedule for this goal. I'm really excited by the thought of reaching this goal. Only ten more books from now until December 31? That sounds so easy!
Here are reviews of my five most recent reads.

I said: 5/5 stars, "This book contained so many inspiring photos of homes, as well as great interviews and blogging tips. I really enjoyed reading it."

I said: 4/5 stars, "This book opened me up to an entirely different view of what it means to be an activist. It also provided some very inspiring interviews and artist bios that drive the meaning of craftivism deeper. I do wish it had provided concrete ideas for how to incorporate craftivism into one's daily life rather than expecting one to use the inspiration of what has already been done from the essays in the book."

I said: 4/5 stars, "This book was so hard to put down (although I'll admit that I did put it down for a few weeks because it was a bit scary for me). The book is dark, but certainly worth reading. It has many unexpected twists and turns. I thoroughly enjoyed it, despite some explicit dark content. "


5. The Four Agreements: A Practical Guide to Personal Freedom by Miguel Ruiz

I said: 5/5 stars, "This book was short, but filled with vast wisdom. I am incredibly grateful that I have read this book. I really think that everyone should read it, and be inspired to live a life full of love and intent."
